Chaîne Amical Event Recap: A Symphony of Flavors at Măm Măm Ực Ực Volume 2
Culinary Excellence Met Artisanal Pairings in an Evening of Gastronomic Delight on February 27th. 2024

The latest installment of the Măm Măm Ực Ực series, hosted by la Chaîne des Rôtisseurs - Bailliage National du Việt-Nam, unfolded into an evening of unparalleled gastronomy and camaraderie on February 27th. The event was marked by the uncorking of Champagne Beaumont Des Crayères Grand Rosé Brut, setting a celebratory tone as we welcomed esteemed guests, including Mr. Henri Ferran and Mrs. Olivia Ferran from the Bailliage of Angola, and Peter Cameron and Jan Thompson from the Bailliage of Australia.

The menu, a testament to culinary innovation, began with Grouper accompanied by a wild bamboo salad, dressed in jackfruit vinaigrette and shallot gastrique, offering a refreshing start. The dish was complemented by a unique cocktail, “Buổi trưa ăn bưởi chua,” or its non-alcoholic counterpart, Jasmine kombucha, balancing the flavors with its citrusy undertones.
The journey continued with Tiger prawn served with a robust shrimp jus and garlic-chili oil, paired with sourdough toast and an herb bouquet. The accompanying drinks, "Hurt is healing" cocktail and Dragonplum kombucha, added layers of complexity to the dish with their bold flavors.

The main course featured succulent Duck breast with pepper sauce, alongside a pickled ambarella & pennywort salad. The "Canh chua bếp Núc" cocktail or the Ginger rosemary kombucha provided a tangy contrast to the richness of the duck.

The finale was a decadent Chocolate mousse with banana ice-cream, drizzled with fish sauce caramel. The dessert pairings, “Bắt con cọp” cocktail or "Into the wild" mocktail, offered a sweet closure to the culinary voyage.
A highlight of the evening was the delightful mix-and-match of pairings by couples, enhancing their dining experience by exploring both alcoholic and non-alcoholic beverages alongside each course.
Amidst the culinary delights, the evening was further enchanted by a magical surprise performance from two talented members of Saigon's Philharmonic Orchestra, whose guitar and violin interludes wove an additional layer of allure into the fabric of the night. This unexpected musical journey, alongside the innovative pairings performed by the restaurant, elevated the dining experience into a celebration of flavors, innovation, and the shared joy of gastronomy, truly embodying the spirit and camaraderie of La Chaîne des Rôtisseurs.
